I think I can, said the soup

Day 1 - Sunday I had planned to make a pot of my Sebi's Red Lentil Soup, but late into prepping I realized we had no red lentils, so opting for a positive result, I switched gears (using the 'my glass is half full' frame of mind) and made a pot of something I called 'Carotene Quinoa Soup' (lots and lots of carrots, yams, onion, garlic, quinoa, sea salt, cracked black pepper, cumin and curry).

Day 2 - The next night I made a pot of brown rice, steamed a can of chickpeas, and made tahini dressing. Thus, a bed of brown rice, a couple of spoonfulls of soup with chick peas and a generous drizzle of garlicky tahuni dressing.

Day 3 - Last night I made another pot of brown rice, fried up thick chunks of zucchini, made tahini dressing (heavier on olive oil, and heated a can of kidney beans in the pot of soup. Thus, a bed of brown rice, a couple of spoonfulls of soup with red kidney beans, chunky fried zucchini and olive oil/garlic/tahini dressing.

Day 4 - will put what's left in the blender (see photo), and use the blended soup in ? ? ?...check back for an update.

I'm curious to see what you make tomorrow. I've had one cooking catastrophe after another. Tonight, I made egg rolls and both my husband and daughter thought they were gross. My husband, Jake, ate them all, but when confronted, admitted that he didn't like them at all.

Anyway, thank you for answering my question about natural family living. My brother and his family do a lot of things similar. I've learned a lot of good things from watching them. I really admire what their goals are as a family. My goal right now is to learn how to garden. We finally live in a house so I would like to do some garden boxes in our backyard. The e.coli scare here with the spinach, lettuce and tomatoes really got me thinking how I would like to grow my own stuff and also teach my kids how.

A swap after Christmas sounds great. I'm excited to find some local things for you to enjoy. Any specific requests?
