Sing of summer # 1: asparagus at every meal
Last night's simple, yet delicious dinner was black turtle beans, steamed asparagus and red leaf lettuce salad. I drizzled tahina dressing over everything. Mmmm. So good. It's the kind of meal that satisfies my soul.
I've found that it takes much less time to cook beans (I don't have a pressure cooker) if I soak them in water for 2 nights/or 2 full days. If you like to nibble on beans, make sure to cook them in extra salty water. That way the beans are like tiny savoury nibbles - a fabulous alternative to chips -- I can hear some of you mutteriong 'yeah sure'... ;-)
