URGENT:
On the community front, was flipping through The Mirror (Oct 20/06), one of our local papers, and there's a huge ad by the Campaign for Public Education about a proposed Toronto schools budget cut of $92 million. Trustees will vote on this on Oct. 25th, you and I too can say "NO MORE CUTS" by voting in the School Trustee election on November 13th.

On a happier beet note, here's a Beet Soup recipe courtesy of this week's Front Door Organics Newsletter that I'm so jazzed to try:
2 garlic cloves, minced
1 onion, chopped
2 tbsp cider vinegar
1 apple
salt
4-5 cups water
1 1/2 cups beets
4 cups veggie broth
1 1/2 tbsp oil
1 tbsp maple syrup
Peel and cut the apple and beets into 1 inch pieces. Cook onion in oil, stirring until soft. Add beets and apple, cook for 5 minutes. Add garlic and cook for 30 seconds. Add broth and 4 cups of water, simmer, uncovered for approx 40 mins. Stir in vinegar and maple syrup. Let cool, then puree soup in a blender until very smooth. Season with salt and pepper and reheat.
