Holiday gift idea, day 1



If you want to keep your giving local this holiday season, Front Door Organics is offering its customers and the general public the opportunity to donate a Basic fresh box to the food bank. For the reduced price of $30.00, they will deliver a Basic fresh box (in a cardboard box so as to avoid charging a box deposit) to the Daily Bread Food Bank.

Here's a recipe, courtesy of Front Door Organics; may look familiear to some of you because it appeared in their newsletter this week:

Apple-Orange Oatbran Muffin

1½ cups oat bran
½ cup whole-wheat flour
¼ cup packed brown sugar
1½ tsp baking powder
1 tsp baking soda
½ tsp each salt and cinnamon
1 cup buttermilk
1 egg
1 tbsp grated orange rind
2 tbsp fresh-squeezed orange juice
1 apple, peeled and diced
1 cup raisins
1 tbsp wheat germ

In large bowl, combine bran, flour, sugar, baking powder, baking soda, salt and cinnamon. Combine buttermilk, egg, orange rind and juice. Stir into dry ingredients just until moistened. Stir in apple and raisins. Spoon into greased or paper-lined muffin cups. Sprinkle with wheat germ. Bake in 400 F (200 C) oven for 18 to 20 minutes or until golden brown.

PS I have not made this recipe yet, but since we prefer vegan baked goods we'll omit the egg, and up the baking powder to 2 tsp, and in lieu of buttermilk use vanilla flavoured soy milk.
