Food Service Director




So, how did all you homemakers, AKA Food Service Directors do? Amy gets double points for confessing to falling off the wagon the same day she jumped on; and Stephanie too gets double because she was honest.


DINNER
The kids and I had an updated version of Seb's Soup. Updates included: upping the cumin to 1 heaping tsp, and for the first time ever adding turmeric. Turmeric was added for its colouring because we were low on carrots and I wanted the colour to be as orangey as the village kids are used to. Village Son devoured his bowl; Village Daughter, who is normally ravenous ate little because she's stuffed up.


DESSERT
I spoon fed them two Moo Mou's while they danced/rocked out to the Backyardigan's CD we got from today's library visit. Then, while reading Duck on A Bike, also from the library, we devoured a bowl of red and green grapes and strawberries.


VILLAGE PAPA'S DINNER
I flip-flopped between making a quinoa dish vs a wild rice pasta dish...

...I was feeling wild, that is, wild rice pasta ish after I'd sipped my glass of white wine. I boiled 1/2 package of wild rice pasta; chopped up 1 red onion, 6 cloves of garlic, 1 zucchini, 1 package of extra firm tofu, and 1 bunch of kale. Fried the onion, then added the garlic, then added the zucchini, then added the tofu, and finally added the kale, sprinkled some sea salt all over the kale leaves, lowered the temperature and covered it for 9 minutes. Drained the pasta (I do not rinse off the starch); added a generous drizzle of olive oil, and about 1 tablespoon of pesto sauce (which is all that was left in the jar).


PLATING:
Pasta first, then the veggie/tofu layer, then sprinkled feta on top. Village Papa didn't seem to breathe through his dinner.



SANITY SAVING TIP AT OUR HOUSE: ALWAYS COOK IN DOUBLE BATCHES

We don't have a microwave, but I always cook double batches of meals which we either heat on the stovetop or warm up in the stove. Tonight we'll probably make a little more pasta, layer the remaining veggies from last night, and maybe, just maybe I'll make a batch of adzuki bean hummus.

Last night we made something really good from what we had in the fridge! We cooked up some tortillas (we buy them in the rolled out dough form) and then inside we put black beans, monterey jack cheese, fresh pico de gallo and sour cream. It was tasty. We had leftover watermellon and fresh squeezed apple juice to go with. I don't even feel like going to the store or even ordering out so we've been rummaging through our cupboards and fridge to come up with ideas to use what we already have. I love this idea for the month of May. I'll see if I can do it.
